Nilanga rice( निलंगा राइस )

 Today we are going to make nilanga rice , a recipie from Latur district of Maharashtra. It's basically khichdi but the art of making it makes it nilanga rice.



 

Now we are going to discuss how to make nilanga rice let's start with ingredients,

Ingredients ( for 4 people) 

1:- rice ( 500 gm)

2:- oil ( 50gm) 

3:- 8-10 green chillies 

4:- curd (5 teaspoon)

5:-khada masala including cinnamon , bay leef , kasuri methi, cardamom

6:- 1 teaspoon ghee or butter 

7:- ginger garlic paste ( 1 teaspoon)

8:- onion (3-4 medium size)

9 :- Tomato (1-2 medium size)

10:- coriander 

11:- tasting powder ( optinal)

12:- Biryani masala (10 gm)

13:- methi ( green fresh) 

14:- masur dal ( 50 gm)


MAKING.......

First of all take a kadhai & put it on gas on low flame .

Add chopped onion into oil & fry it untill golden brown colour , after that add cinnamon cardamom & bay leaf , 

After getting aroma of khada masala add chopped green chillies , tomato , cook it slightly 

After 5 minutes add curd & cook it for another 5 minutes 

Now,  add biryani masala , chopped potatoes , methi & half of coriander, & fry all masala until it leaves oil from it.  It will look like this



Now add 3-4 glass of water & wait until it boils, after boiling add rice into it & stir the rice until all water evaporates , after water evaporating , now flat all the with the help of any kitchen tool cover it with aluminium foil & keep it on low flame for about 10-15 minutes & your nilanga rice is ready to serve 

Tip:- add ghee before covering with aluminium foil
